Delicious Easter

I love Easter. As much as Christmas, if not more. I love the Springtime, the tulips, the chocolate bunnies, church services and all the young-uns in their special outfits. I also love a big Easter Sunday Dinner.

For dessert,t we really love this carrot cake recipe. It's baked in a 9x13, which isn't the prettiest presentation, but it's so dense and moist that a layer cake just doesn't work well:

2 C. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs
3/4 C. canola oil
3/4 C. buttermilk
2 C. sugar
2 tsp. vanilla
12 C. shredded carrot
2 C. shredded coconut
1 8 oz. can crushed pineapple, drained
1 C. chopped nuts (walnut, almond, or macadamia)
Whisk together dry ingredients, set aside. Combine eggs, oil, buttermilk, sugar, vanilla and beat gently until just combined. Slowly add dry ingredients and mix gently until combined. Stir in Carrot, coconut, pineapple, and nuts. Bake in a well greased 9x 13 pan @350 for 1 hour (clean toothpick test).
Glaze:
In a saucepan combine 1 C. sugar, 1/2 tsp. baking soda, 1/2 c. buttermilk, 1/2 C. butter, 1 tsp. vanilla, 1 Tbsp. corn syrup, 1 tsp. orange zest. Bring to a boil, boil for 1 minute, remove from heat. Pour over baked but still warm cake. Cool completely before frosting with your favorite cream cheese frosting. I like to frost it with big dollops and swirls, so it looks more rustic than professional.

Carrot cake is my FAVORITE, but I've never attempted to make it myself. Thank you for the recipe recommendation - I'm going to try it out!
