good food

I really like to eat. Good food. Often. So does my  husband and so does my little guy. Last night I experimented (yikes!) with the random ingredients in my fridge and actually found success. B emailed me today and said that last night's dinner (and his lunch today) was among my Top 10 best meals ever. (I'm afraid 10 might be stretching it!) I'm so proud, I'm sharing the recipe with you: 

Autumn Roast Pork Loin
  • Preheat oven to 400
  • 2-3 Sweet potatoes, peeled and quartered
  • 1 yellow onion, quartered
  • 2 cups baby carrots
  • 1 pork loin, 2-3 pounds
  • olive oil
  • kosher salt & fresh ground black pepper
  • 1/2 tsp cumin
  • 2 Tbsp brown sugar
  • Coat your roasting pan with non-stick cooking spray. Arrange veggies in the bottom of the roasting pan and top with the meat. Rub olive oil, salt and pepper (be generous), cumin and brown sugar over the meat.
  • Roast, covered, 30 minutes. Remove cover and roast another 30 minutes or until meat is cooked through and veggies are tender. Remove from oven and let rest for 10 minutes. Slice the pork and serve along side the  veggies. Accompaniment: fresh greens and bread.
