I love baked goods: a nice chewy macaroon or rich chocolate cake (with plenty of frosting) or a berry pie when the opportunity presents itself, but I really don't like to do the actual baking. It's messy and time consuming and tedious and I'm just not very good. At all. But, at Christmas time there are a couple of favorite little goodies I make for friends and family, things my mom always made just at Christmas. I've never shared this recipe before because it's one of only a few things I can make with confidence and I like to think it's my exclusive, or my signature but that's silly. Here's the super easy recipe (no baking required). Enjoy!
1/2 cup butter, melted
1 cup powdered sugar
3 cups shredded coconut
12 maraschino cherries, well-drained and halved OR 24 whole almonds, unsalted
2/3 cup semi-sweet chocolate chips, melted
Combine melted butter, powdered sugar and coconut in a large bowl. Stir until evenly blended and sticky. Shape into 1 1/2 inch balls and make an indentation in the top of each. Place on wax paper. Place cherry half or almond in each indentation and cover with melted chocolate. Store, tightly covered, in the refrigerator. Makes 2 dozen.
